The name of the drink comes from a combination of the name of the Korean doctorKOMBU, who brought the drink to Japan and treated Emperor Inkyo's digestive problems, andCHA, which means "drink" in Japanese.

KombuCHAis a sweet fermented tea drink made usingSCOBY(SymbioticCultureOfBacteriaandYeast), also known as Japanese mushroom.

KombuCHA uzyskiwana jest poprzez umieszczenie grzybka SCOBY w naparze z herbaty z dodatkiem cukru. Pożywką dla grzyba, który rozrasta się poprzez tworzenie kolejnych warstw, jest rozpuszczony w herbacie cukier. Podczas tego procesu napar zaczyna fermentować, wytwarzając kwas węglowy, dzięki któremu kombucha jest lekko gazowana, zaś cukier w większości zostaje “skonsumowany” przez grzybka i smak napoju ze słodkiego zamienia się w przyjemnie kwaśny.
